Ingredients

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 3 cups All-purpose Flour
  • 2 Eggs
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • Food Coloring (red and green)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by vanilla extract.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually add to butter mixture until just combined.
  5. Divide dough in half; tint one half with food coloring.
  6. Roll out both doughs into rectangles on parchment paper, place plain dough on top of colored dough, and roll into a log.
  7. Chill in the refrigerator for at least 1 hour.
  8. Slice log into 1/4-inch thick rounds and place on a baking sheet.
  9. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire rack.

Notes

For vegan versions, replace butter with coconut oil and use a flax egg. Ensure butter is soft for easy mixing and chill dough for best results.
