Ingredients
- 1 lb steak (flank or sirloin)
- 2 ears fresh corn (or 1 cup frozen corn)
- 2 ripe avocados
- 1 cup fresh cilantro
- 1/2 cup Greek yogurt
- 1 lime (juiced)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season steak with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and cook steak for 4-5 minutes per side for medium-rare. Remove and let it rest.
- In the same skillet, add more oil if needed and sauté the corn for about 5–7 minutes until slightly charred.
- In a small bowl, mix Greek yogurt, minced garlic, cilantro, lime juice, and salt to create the cilantro cream.
- Assemble the bowl by adding cooked quinoa or rice at the base. Layer with sliced steak, roasted corn, and diced avocado. Drizzle cilantro cream on top and garnish with extra cilantro and lime wedges.
- Serve fresh alongside tortilla chips or a light salad.
