Ingredients

  • 12 large cremini or button mushrooms
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (parsley, thyme, chives), chopped
  • 1/2 cup breadcrumbs
  • 2 tbsp truffle oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gently wipe the mushrooms with a damp cloth to remove any dirt, then remove the stems carefully.
  3. In a mixing bowl, combine cream cheese, Parmesan cheese, minced garlic, chopped herbs, salt, and pepper. Add truffle oil to taste.
  4. Stuff each mushroom cap generously with the creamy mixture.
  5. Sprinkle breadcrumbs on top of the stuffed mushrooms.
  6. Place on a baking sheet and bake for 15-20 minutes until the mushrooms are tender and tops are lightly browned.
  7. Let cool slightly before serving.

Notes

For a different flavor, subsitute goat cheese or ricotta for cream cheese. Use pecorino in place of Parmesan if needed.
