Ingredients

  • 8 oz cremini or shiitake mushrooms, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 cup fresh cranberries
  • 1 sheet buttery puff pastry, thawed
  • 4 oz cream cheese
  • 1 tbsp olive oil
  • Fresh thyme and rosemary, to taste
  • Salt and pepper, to taste
  • 1/4 tsp nutmeg

Instructions

  1. Clean and chop mushrooms, garlic, and herbs. Rinse cranberries.
  2. In a skillet, heat olive oil and sauté garlic until fragrant; add mushrooms and cook until tender.
  3. Add cranberries and season with salt, pepper, and herbs. Let cool.
  4. Mix sautéed ingredients with cream cheese until well combined.
  5. Roll out puff pastry and cut into squares.
  6. Spoon filling onto half of each square, fold over, and seal edges.
  7. Preheat oven to 400°F (200°C) and bake for 20-25 minutes until golden.
