Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup feta cheese, crumbled
- 1/2 cup pitted olives, chopped (green or black)
- 2 large eggs
- 1 cup whole milk
- 1 tablespoon minced garlic (optional)
- 2 tablespoons fresh rosemary or thyme, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- Fold in the cheeses and olives.
- In a separate bowl, whisk together the eggs and milk, adding minced garlic and herbs if desired.
- Combine the wet and dry ingredients, stirring until just mixed.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 45-50 minutes, or until golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm.
Notes
For variations, feel free to add sun-dried tomatoes, chili flakes, or walnuts for extra flavor and texture.
