Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine olive oil, crushed garlic, salt, pepper, and sumac. Stir until mixed.
- Toss the chicken pieces in the marinade, ensuring every piece is coated. Let it sit for at least 30 minutes.
- Spread the chicken onto a baking sheet or roasting pan, skin side up, and scatter fresh pomegranate seeds on top.
- Roast in the oven for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken halfway through.
- Finish with a sprinkle of fresh herbs and an extra shower of pomegranate seeds before serving.
- Let the chicken rest for a few minutes before serving.
