Ingredients
- 2 boneless chicken breasts or thighs
- 1 cup Greek yogurt
- 1 medium cucumber, grated
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 4 cups romaine or butter lettuce, chopped
- 1 cup diced tomatoes
- 1 cup radishes, sliced
- 1/2 cup olives (Kalamata or green)
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Season the chicken with salt, pepper, and lemon juice. Grill or sauté until golden and fully cooked (about 6-7 minutes per side). Allow to cool and chop into bite-sized pieces.
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, and a pinch of salt. Mix until well combined.
- In a large bowl, toss together the chopped chicken, lettuce, tomatoes, radishes, olives, and feta.
- Gently fold in the tzatziki dressing until well-coated. Chill for 30 minutes or serve immediately.
- Garnish with extra dill and a squeeze of lemon before serving.
Notes
Great for summer picnics and gatherings. Feel free to substitute with shrimp or chickpeas for a different flavor.
