Ingredients

  • 2 boneless chicken breasts or thighs
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 4 cups romaine or butter lettuce, chopped
  • 1 cup diced tomatoes
  • 1 cup radishes, sliced
  • 1/2 cup olives (Kalamata or green)
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Season the chicken with salt, pepper, and lemon juice. Grill or sauté until golden and fully cooked (about 6-7 minutes per side). Allow to cool and chop into bite-sized pieces.
  2. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, and a pinch of salt. Mix until well combined.
  3. In a large bowl, toss together the chopped chicken, lettuce, tomatoes, radishes, olives, and feta.
  4. Gently fold in the tzatziki dressing until well-coated. Chill for 30 minutes or serve immediately.
  5. Garnish with extra dill and a squeeze of lemon before serving.

Notes
