Ingredients
- 8 oz cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: In a bowl, mix graham cracker crumbs with melted butter and sugar. Press into greased muffin tins.
- Mix the filling: Beat cream cheese until smooth, add sugar, sour cream, and vanilla, mixing well. Add eggs one at a time, mixing gently.
- Pour the filling into crusts, filling three-quarters full.
- Bake for 20 to 25 minutes until edges are set. Centers should have a slight jiggle.
- Cool at room temperature for 15 minutes, then refrigerate for at least 4 hours.
- Remove from molds and top as desired before serving.
Notes
For a lighter version, consider using Greek yogurt instead of sour cream. You can customize toppings to please everyone’s palate.
