Ingredients

  • 4 boneless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh basil or parsley for garnish
  • Olive oil for frying

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Flatten the chicken breasts to an even thickness using a meat mallet.
  3. Prepare a breading station with one bowl for beaten eggs and another for breadcrumbs mixed with parmesan.
  4. Dip each chicken piece in the egg, then coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and cook chicken for 3-4 minutes on each side until golden brown.
  6. Spread a layer of marinara sauce in a baking dish, place chicken on top, cover with more sauce, and sprinkle with mozzarella and parmesan.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for another 10 minutes until the cheese is bubbly and golden.
  8. Let rest for a few minutes, garnish with basil or parsley, and serve with spaghetti or garlic bread.
