Ingredients
- 4 boneless chicken breasts
- 1 cup Italian-style breadcrumbs
- 2 large eggs
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- Fresh basil or parsley for garnish
- Olive oil for frying
Instructions
- Preheat oven to 375°F (190°C).
- Flatten the chicken breasts to an even thickness using a meat mallet.
- Prepare a breading station with one bowl for beaten eggs and another for breadcrumbs mixed with parmesan.
- Dip each chicken piece in the egg, then coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook chicken for 3-4 minutes on each side until golden brown.
- Spread a layer of marinara sauce in a baking dish, place chicken on top, cover with more sauce, and sprinkle with mozzarella and parmesan.
- Cover with foil and bake for 20 minutes, then uncover and bake for another 10 minutes until the cheese is bubbly and golden.
- Let rest for a few minutes, garnish with basil or parsley, and serve with spaghetti or garlic bread.
Notes
Let the chicken rest after baking for easier serving. Serve with garlic bread or a fresh salad.
