- 1 cup unsalted butter, at room temperature
- 1 cup powdered sugar, plus more for rolling
- 2 cups all-purpose flour
- 1 cup ground pecans, toasted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Cream the unsalted butter and powdered sugar together until fluffy.
- Mix in the vanilla extract, then add flour, salt, and ground pecans. Stir until a soft dough forms, refrigerating for 15-20 minutes if too soft.
- Roll the dough into 1-inch balls and place them on the baking sheet, leaving space between each.
- Bake for 12-15 minutes or until the edges begin to lightly brown.
- Cool slightly and roll in powdered sugar.
- Allow to cool completely on a wire rack before serving.
Notes
For a dairy-free option, substitute coconut oil for butter. Almond flour can be used for a gluten-free version.
