Ingredients

  • 1 cup active sourdough starter
  • 1 cup warm water
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2-3 tablespoons freshly ground black pepper
  • ½ cup grated parmesan cheese
  • Olive oil, for drizzling

Instructions

  1. Combine the sourdough starter and warm water, then mix in the flour and salt until a shaggy dough forms.
  2. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic, then let it rest for 30 minutes covered with a cloth.
  3. Incorporate the black pepper and grated parmesan into the dough while kneading.
  4. Divide the dough into 2-4 portions and roll each into 10-12 inch flatbreads.
  5. Preheat the oven to 450°F (232°C) and place a pizza stone inside, if using.
  6. Bake the flatbread on a parchment-lined sheet or directly on the pizza stone for 10-15 minutes until golden brown and hollow-sounding when tapped.
  7. Drizzle with olive oil, sprinkle with additional parmesan and black pepper, cut into wedges, and serve warm.
