Ingredients
- 1 cup active sourdough starter
- 1 cup warm water
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2-3 tablespoons freshly ground black pepper
- ½ cup grated parmesan cheese
- Olive oil, for drizzling
Instructions
- Combine the sourdough starter and warm water, then mix in the flour and salt until a shaggy dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic, then let it rest for 30 minutes covered with a cloth.
- Incorporate the black pepper and grated parmesan into the dough while kneading.
- Divide the dough into 2-4 portions and roll each into 10-12 inch flatbreads.
- Preheat the oven to 450°F (232°C) and place a pizza stone inside, if using.
- Bake the flatbread on a parchment-lined sheet or directly on the pizza stone for 10-15 minutes until golden brown and hollow-sounding when tapped.
- Drizzle with olive oil, sprinkle with additional parmesan and black pepper, cut into wedges, and serve warm.
Notes
Serve with a garlic herb olive oil for dipping and pair with a salad or soup for a complete meal.
