Ingredients
- 1 cup ube (fresh or frozen)
- 3 cups all-purpose flour
- 1 cup coconut milk
- 1/3 cup sugar
- 2 teaspoons yeast (instant or active dry)
- 1 teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions
- If using fresh ube, steam until soft, then mash until smooth. If using frozen, thaw and mash.
- In a small bowl, mix warm water, a teaspoon of sugar, and yeast; let sit for about 10 minutes until frothy.
- In a large mixing bowl, combine mashed ube, coconut milk, remaining sugar, and activated yeast mixture; stir until well combined.
- Gradually mix in flour and sea salt until a sticky dough forms.
- Transfer dough to a floured surface and knead for about 5-10 minutes until smooth and elastic.
- Place dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm area until doubled in size (about 1-2 hours).
- Punch down dough, divide into equal pieces, shape into rolls, and place in a greased baking dish.
- Cover rolls and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
- Brush rolls with melted coconut oil after they come out of the oven.
Notes
These rolls can be served warm with a spread or as a dessert with whipped cream.
