  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

  • 8 oz mixed mushrooms (button, cremini, shiitake)
  • 1 cup Gruyère cheese, shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup chicken or vegetable broth
  • 1 package puff pastry
  • 1 egg (for egg wash)

Instructions

  1. In a large skillet, melt butter over medium heat. Add onions and cook until translucent.
  2. Add mushrooms and garlic, sautéing until browned.
  3. Sprinkle in flour and stir to coat. Gradually pour in broth, whisking continuously until thickened.
  4. Stir in Gruyère cheese until melted. Season with salt, pepper, and herbs. Let cool.
  5. Roll out puff pastry and cut into circles for the base and tops.
  6. Preheat oven to 400°F (200°C). Fill pastry rounds with cooled filling and top with another pastry round, sealing edges.
  7. Brush tops with egg wash and bake for 20-25 minutes until golden.

Notes

For different flavors, consider adding other types of mushrooms or cheeses. Allow filling to cool before assembling the pot pies.
