Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and 1/2 cup of powdered sugar until fluffy (2-3 minutes).
- Gradually mix in the vanilla and mint extracts until fully incorporated.
- In another bowl, whisk together the flour and baking powder, then fold this into the butter-sugar mixture.
- Fold in the chocolate chips until evenly distributed.
- Form the cookie dough into small balls and place them on a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for about 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool slightly, then roll them in powdered sugar until generously coated.
- Transfer to a wire rack to cool completely before serving.
Notes
