Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chopped nuts (such as pecans or peanuts)
  • 1/4 teaspoon sea salt
  • Optional: vanilla extract, coconut flakes, or maple syrup

Instructions

  1. Begin by pitting the dates and soaking them in warm water for about 10 minutes to soften.
  2. In a food processor, blend the soaked dates and almond butter until smooth and creamy.
  3. Add the cocoa powder, chopped nuts, and a pinch of sea salt. Pulse until mixed but still coarse.
  4. Line a small baking dish with parchment paper and transfer the mixture into the dish, pressing it down firmly.
  5. Refrigerate for at least 2 hours or until the bars are firm.
  6. Once firm, remove from the dish and slice into bars or squares. Store in an airtight container in the fridge.

Notes
