Ingredients
- 1 cup Medjool dates, pitted
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup unsweetened cocoa powder
- 1/2 cup chopped nuts (such as pecans or peanuts)
- 1/4 teaspoon sea salt
- Optional: vanilla extract, coconut flakes, or maple syrup
Instructions
- Begin by pitting the dates and soaking them in warm water for about 10 minutes to soften.
- In a food processor, blend the soaked dates and almond butter until smooth and creamy.
- Add the cocoa powder, chopped nuts, and a pinch of sea salt. Pulse until mixed but still coarse.
- Line a small baking dish with parchment paper and transfer the mixture into the dish, pressing it down firmly.
- Refrigerate for at least 2 hours or until the bars are firm.
- Once firm, remove from the dish and slice into bars or squares. Store in an airtight container in the fridge.
Notes
Make sure to use fresh, soft Medjool dates for the best texture. You can customize the bars with your favorite nuts or add a hint of sea salt on top for flavor balance.
