- 2 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh or dried strawberries, hulled and chopped
- 1 cup white chocolate chips
- Pink sugar for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt; gradually add this to the wet mixture.
- Fold in the strawberries and white chocolate chips gently.
- Use a cookie scoop or tablespoon to drop the dough onto the baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are light golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Use room temperature ingredients for better incorporation.
