Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh or dried strawberries, hulled and chopped
  • 1 cup white chocolate chips
  • Pink sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt; gradually add this to the wet mixture.
  5. Fold in the strawberries and white chocolate chips gently.
  6. Use a cookie scoop or tablespoon to drop the dough onto the baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are light golden brown.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Use room temperature ingredients for better incorporation.
