Warm, spiced gingerbread cookies filled with a creamy frosting, perfect for the holidays.

Ingredients

  • 1 cup softened butter
  • 1 cup sugar
  • 3/4 cup molasses
  • 1 egg
  • 4 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 8 ounces cream cheese
  • 1/4 cup softened butter (for frosting)
  • 2 cups powdered sugar
  • Dash of vanilla
  • Pinch of cinnamon (for frosting)

Instructions

  1. Cream together softened butter and sugar until light and fluffy.
  2. Blend in molasses and egg until fully incorporated.
  3. In a separate bowl, whisk together flour, ginger, cinnamon, cloves, and baking soda. Slowly add to wet ingredients and mix until just combined.
  4. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
  5. Preheat oven to 350°F (175°C). Roll out the dough to about 1/4 inch thick and cut out shapes.
  6. Bake for 8-10 minutes or until edges are firm.
  7. While cookies cool, prepare the filling by beating cream cheese and butter until smooth and adding powdered sugar, vanilla, and cinnamon.
  8. Spread or pipe filling onto flat sides of half the cookies and sandwich with the other halves.

Notes

Chill the dough to enhance flavor and ease rolling. Avoid overbaking to keep cookies soft.
