Ingredients

  • 1 lb ground turkey
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Olive oil
  • Shredded cheese (optional, for topping)
  • Greek yogurt (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin.
  2. Sauté the vegetables in a skillet with olive oil until softened, about 5-7 minutes.
  3. Add the ground turkey and cook until browned, about 8-10 minutes.
  4. Stir in the chili powder, cumin, smoked paprika, and diced tomatoes. Simmer for 5 minutes.
  5. Gently fold in the black and kidney beans.
  6. Spoon the turkey mixture into the prepared muffin tin.
  7. Bake for 20-25 minutes until firm and golden.
  8. Let cool for a few minutes, add toppings, and serve.
