Ingredients
- 1 lb ground turkey
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Olive oil
- Shredded cheese (optional, for topping)
- Greek yogurt (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin.
- Sauté the vegetables in a skillet with olive oil until softened, about 5-7 minutes.
- Add the ground turkey and cook until browned, about 8-10 minutes.
- Stir in the chili powder, cumin, smoked paprika, and diced tomatoes. Simmer for 5 minutes.
- Gently fold in the black and kidney beans.
- Spoon the turkey mixture into the prepared muffin tin.
- Bake for 20-25 minutes until firm and golden.
- Let cool for a few minutes, add toppings, and serve.
Notes
You can adjust the spice level by adding jalapeños or other spices as desired.
