Ingredients

  • 1 pound ground chicken
  • 3-4 cloves minced garlic
  • 1 small chopped onion
  • 1 cup breadcrumbs
  • 1 cup grated parmesan cheese
  • 1 beaten egg
  • Handful of chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
  2. Sauté minced garlic and chopped onion in olive oil until translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed garlic and onion, breadcrumbs, parmesan, beaten egg, and parsley. Season with salt and pepper.
  4. Mix gently until just combined, then transfer the mixture to the greased loaf pan.
  5. Shape the top to a dome and sprinkle extra parmesan on top.
  6. Bake for 45-50 minutes, or until internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.
