Ingredients
- 1 pound ground chicken
- 3-4 cloves minced garlic
- 1 small chopped onion
- 1 cup breadcrumbs
- 1 cup grated parmesan cheese
- 1 beaten egg
- Handful of chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a loaf pan.
- Sauté minced garlic and chopped onion in olive oil until translucent.
- In a large mixing bowl, combine ground chicken, sautéed garlic and onion, breadcrumbs, parmesan, beaten egg, and parsley. Season with salt and pepper.
- Mix gently until just combined, then transfer the mixture to the greased loaf pan.
- Shape the top to a dome and sprinkle extra parmesan on top.
- Bake for 45-50 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing.
Notes
For added flavor, consider sautéing mushrooms with the garlic and onion. Letting the meatloaf rest is crucial for moisture retention.
