Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley or thyme, chopped
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts between plastic wrap until 1/2 inch thick. Season with salt and pepper.
  2. Set up a breading station with flour, whisked eggs, and a mixture of breadcrumbs, Parmesan, garlic, and herbs.
  3. Dredge each chicken piece in flour, dip in egg, and then coat in breadcrumb mixture.
  4. Heat olive oil and butter in a skillet over medium heat. Ensure it’s hot before adding chicken.
  5. Cook cutlets for 4-5 minutes on each side until golden brown. Drain on paper towels.
  6. Serve with lemon wedges, fresh herbs, or salad.
