Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley or thyme, chopped
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Pound chicken breasts between plastic wrap until 1/2 inch thick. Season with salt and pepper.
- Set up a breading station with flour, whisked eggs, and a mixture of breadcrumbs, Parmesan, garlic, and herbs.
- Dredge each chicken piece in flour, dip in egg, and then coat in breadcrumb mixture.
- Heat olive oil and butter in a skillet over medium heat. Ensure it’s hot before adding chicken.
- Cook cutlets for 4-5 minutes on each side until golden brown. Drain on paper towels.
- Serve with lemon wedges, fresh herbs, or salad.
