Ingredients
- 1 cup buckwheat flour (or all-purpose/gluten-free flour)
- 1 cup milk
- 1 egg
- Pinch of salt
- Butter (for cooking)
- Smoked salmon
- Fresh dill (for garnish)
- Crème fraîche (for serving)
- Optional: Fresh lemon, capers (for garnish)
Instructions
- In a bowl, mix buckwheat flour, milk, egg, and a pinch of salt. Allow it to rest for 30 minutes.
- Heat a non-stick skillet over medium heat and melt a touch of butter. Pour small dollops of the batter into the skillet and cook until golden brown, about 2-3 minutes per side.
- On each blini, place a slice of smoked salmon and sprinkle chopped dill over top.
- Add a dollop of crème fraîche on each blini and garnish with extra dill or capers if desired.
- Serve warm with a squeeze of fresh lemon.
Notes
For fluffier blinis, do not overmix the batter and use clarified butter for a richer flavor.
