A delightful, fluffy blini cake layered with smoked salmon and fresh dill, served with a dollop of crème fraîche.

Ingredients

  • 1 cup buckwheat flour (or all-purpose/gluten-free flour)
  • 1 cup milk
  • 1 egg
  • Pinch of salt
  • Butter (for cooking)
  • Smoked salmon
  • Fresh dill (for garnish)
  • Crème fraîche (for serving)
  • Optional: Fresh lemon, capers (for garnish)

Instructions

  1. In a bowl, mix buckwheat flour, milk, egg, and a pinch of salt. Allow it to rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt a touch of butter. Pour small dollops of the batter into the skillet and cook until golden brown, about 2-3 minutes per side.
  3. On each blini, place a slice of smoked salmon and sprinkle chopped dill over top.
  4. Add a dollop of crème fraîche on each blini and garnish with extra dill or capers if desired.
  5. Serve warm with a squeeze of fresh lemon.

Notes

For fluffier blinis, do not overmix the batter and use clarified butter for a richer flavor.
