Ingredients
- 2 lbs beef (chuck or brisket)
- 8 oz egg noodles or wide noodles
- 4 cups beef or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 2 tbsp soy sauce
- 2 tbsp butter or oil
- Fresh thyme and rosemary
Instructions
- Prepare the Ingredients: Chop your vegetables and herbs and set them aside. Cut the beef into bite-sized pieces.
- Sear the Beef: In a large skillet, heat butter over medium-high heat. Add the beef and brown on all sides for 4-5 minutes.
- Sauté Aromatics: Remove beef, then add onions and garlic to the pot. Sauté until translucent, about 3 minutes.
- Add Broth and Noodles: Pour in broth, scraping up brown bits. Bring to a boil, then add noodles and simmer for 8-10 minutes.
- Incorporate Vegetables and Season: Stir in vegetables, soy sauce, thyme, and rosemary. Cook until vegetables are tender, about 5 minutes.
- Serve and Enjoy: Ladle into bowls and garnish with fresh herbs. Serve with crusty bread or salad.
Notes
For a gluten-free option, substitute tamari for soy sauce and select gluten-free noodles. Consider using chicken or plant-based proteins if desired.
