A comforting Southern dish featuring tender beef, hearty noodles, and a savory broth, ideal for family gatherings.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

  • 2 lbs beef (chuck or brisket)
  • 8 oz egg noodles or wide noodles
  • 4 cups beef or vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 2 tbsp soy sauce
  • 2 tbsp butter or oil
  • Fresh thyme and rosemary

Instructions

  1. Prepare the Ingredients: Chop your vegetables and herbs and set them aside. Cut the beef into bite-sized pieces.
  2. Sear the Beef: In a large skillet, heat butter over medium-high heat. Add the beef and brown on all sides for 4-5 minutes.
  3. Sauté Aromatics: Remove beef, then add onions and garlic to the pot. Sauté until translucent, about 3 minutes.
  4. Add Broth and Noodles: Pour in broth, scraping up brown bits. Bring to a boil, then add noodles and simmer for 8-10 minutes.
  5. Incorporate Vegetables and Season: Stir in vegetables, soy sauce, thyme, and rosemary. Cook until vegetables are tender, about 5 minutes.
  6. Serve and Enjoy: Ladle into bowls and garnish with fresh herbs. Serve with crusty bread or salad.

Notes

For a gluten-free option, substitute tamari for soy sauce and select gluten-free noodles. Consider using chicken or plant-based proteins if desired.
