Ingredients
- 2 English cucumbers, sliced thinly
- 4 heirloom tomatoes, cut into bite-sized wedges
- 8 oz fresh mozzarella, torn into pieces
- 1 cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- Salt, to taste
- Freshly ground pepper, to taste
Instructions
- Wash cucumbers and tomatoes thoroughly. Slice cucumbers and cut tomatoes into wedges.
- In a large bowl or platter, layer cucumbers, tomatoes, and mozzarella alternately.
- Sprinkle torn basil leaves throughout the salad.
- Drizzle with olive oil over the top.
- Season with salt and freshly ground pepper to taste. Toss gently and serve immediately.
