Ingredients

  • 1 package frozen hashbrowns
  • 6 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 cup whole or 2% milk
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 cup mushrooms, chopped
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • Fresh herbs (thyme or chives), optional

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook frozen hashbrowns in a skillet with a bit of oil or butter until crispy.
  3. Sauté chopped vegetables in another pan until softened.
  4. In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  5. In a greased baking dish, layer crispy hashbrowns, sautéed veggies, and pour the egg mixture on top. Sprinkle cheese over it.
  6. Bake for 35-40 minutes or until the center is set and the top is golden brown.
  7. Allow to cool for 5 minutes before slicing and serving.
