Ingredients
- 1 package frozen hashbrowns
- 6 large eggs
- 1 cup cheddar cheese, shredded
- 1 cup whole or 2% milk
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 cup mushrooms, chopped
- Salt and pepper to taste
- 1 tsp garlic powder
- Fresh herbs (thyme or chives), optional
Instructions
- Preheat the oven to 350°F (175°C).
- Cook frozen hashbrowns in a skillet with a bit of oil or butter until crispy.
- Sauté chopped vegetables in another pan until softened.
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- In a greased baking dish, layer crispy hashbrowns, sautéed veggies, and pour the egg mixture on top. Sprinkle cheese over it.
- Bake for 35-40 minutes or until the center is set and the top is golden brown.
- Allow to cool for 5 minutes before slicing and serving.
Notes
Customize with your choice of vegetables and cheeses. Great for meal prep; can be made ahead and baked in the morning.
