Ingredients
- Pasta (spaghetti, fettuccine, or penne)
- 1 cup Greek yogurt
- 4 cloves garlic, minced
- 8 oz cremini or shiitake mushrooms, sliced
- 2 tbsp extra-virgin olive oil
- Fresh parsley or basil, for garnish
- 1/2 cup finely grated Parmesan cheese
Instructions
- Cook pasta in a large pot of salted boiling water until al dente; reserve 1 cup of pasta water.
- In a large skillet, heat olive oil over medium heat and sauté garlic for 1-2 minutes until fragrant.
- Add sliced mushrooms and cook until tender, about 5-7 minutes. If using, add fresh herbs.
- Remove from heat and mix in the Greek yogurt, salt, and pepper.
- Add the cooked pasta to the skillet, tossing to combine. If needed, add reserved pasta water gradually for desired creaminess.
- Serve warm, garnished with fresh herbs and Parmesan cheese.
Notes
For added flavor, try using roasted garlic instead of fresh and consider adding spinach or sun-dried tomatoes as a variation.
