Ingredients

  • Pasta (spaghetti, fettuccine, or penne)
  • 1 cup Greek yogurt
  • 4 cloves garlic, minced
  • 8 oz cremini or shiitake mushrooms, sliced
  • 2 tbsp extra-virgin olive oil
  • Fresh parsley or basil, for garnish
  • 1/2 cup finely grated Parmesan cheese

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente; reserve 1 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic for 1-2 minutes until fragrant.
  3. Add sliced mushrooms and cook until tender, about 5-7 minutes. If using, add fresh herbs.
  4. Remove from heat and mix in the Greek yogurt, salt, and pepper.
  5. Add the cooked pasta to the skillet, tossing to combine. If needed, add reserved pasta water gradually for desired creaminess.
  6. Serve warm, garnished with fresh herbs and Parmesan cheese.

Notes

For added flavor, try using roasted garlic instead of fresh and consider adding spinach or sun-dried tomatoes as a variation.
