Ingredients
- Pasta (spaghetti, penne, or whole grain)
- 1 cup Ricotta Cheese
- 2 cups Fresh Spinach
- 2 tablespoons Lemon Juice
- 1 tablespoon Lemon Zest
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- Salt and Pepper, to taste
- Fresh Herbs (basil, parsley, or chives) for garnish (optional)
Instructions
- Cook pasta in salted boiling water according to package instructions (8-10 minutes).
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 30 seconds).
- Add fresh spinach and stir until wilted (2-3 minutes).
- Reserve 1 cup of pasta water, then drain pasta and add to the skillet with spinach.
- Mix in ricotta cheese, lemon juice, and lemon zest. Stir gently, adding reserved pasta water gradually until creamy.
- Season with salt and pepper and garnish with fresh herbs.
- Serve immediately.
Notes
For variations, try arugula instead of spinach, or cottage cheese in place of ricotta.
