A quick and delicious dish combining zesty lemon and creamy ricotta with fresh spinach, perfect for a family meal.

Ingredients

  • Pasta (spaghetti, penne, or whole grain)
  • 1 cup Ricotta Cheese
  • 2 cups Fresh Spinach
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Fresh Herbs (basil, parsley, or chives) for garnish (optional)

Instructions

  1. Cook pasta in salted boiling water according to package instructions (8-10 minutes).
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 30 seconds).
  3. Add fresh spinach and stir until wilted (2-3 minutes).
  4. Reserve 1 cup of pasta water, then drain pasta and add to the skillet with spinach.
  5. Mix in ricotta cheese, lemon juice, and lemon zest. Stir gently, adding reserved pasta water gradually until creamy.
  6. Season with salt and pepper and garnish with fresh herbs.
  7. Serve immediately.

Notes

For variations, try arugula instead of spinach, or cottage cheese in place of ricotta.
