Ingredients

  • 1 bone-in ham (size depends on gathering)
  • 1 cup pure maple syrup
  • 1/2 cup bourbon
  • 1/4 cup Dijon mustard
  • 1/2 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground cloves

Instructions

  1. Preheat your oven to 325°F (163°C). Score the surface of the ham in a diamond pattern, cutting through the fat but not into the meat.
  2. In a saucepan, combine maple syrup, bourbon, Dijon mustard, brown sugar, soy sauce, and black pepper. Simmer for 5-7 minutes until thickened.
  3. Place the ham in a roasting pan, brush with glaze, cover with foil, and bake for 1 hour, basting every 20 minutes.
  4. After 1 hour, remove the foil, brush with more glaze, increase the temperature to 400°F (200°C), and bake for an additional 20-30 minutes, until caramelized and the internal temperature reaches 140°F (60°C).
  5. Allow the ham to rest for 15-20 minutes before slicing and serving.

Notes

Keep basting regularly to maintain moisture and flavor. For a crispy finish, broil for a few minutes, watching closely.
