Ingredients
- 4 boneless chicken breasts or thighs
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 8 ounces button mushrooms, sliced
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon fresh thyme (or other fresh herbs like rosemary or parsley)
Instructions
- Preparation: Gather all your ingredients. Chop the garlic finely and slice the mushrooms.
- Sear the Chicken: Heat a large skillet over medium-high heat. Add olive oil, season the chicken with salt and pepper, and sear for 7-10 minutes per side until golden brown. Remove and set aside.
- Sauté the Mushrooms: In the same skillet, add butter. Once melted, add mushrooms and garlic. Cook for about 5 minutes until soft and aromatic.
- Create the Sauce: Add chicken broth to the skillet. Scrape the bottom to release bits and let simmer for a minute.
- Combine the Chicken: Return the chicken, add accumulated juices, drizzle with more butter if desired, and sprinkle with herbs. Simmer for 5-10 minutes until cooked through.
- Taste Test: Adjust seasoning as needed before serving.
- Serve and Enjoy: Serve immediately, garnished with parsley over rice or pasta.
Notes
This dish is versatile; feel free to substitute turkey instead of chicken or add seasonal vegetables like spinach for extra nutrition.
