Ingredients

  • 1 cup whole-milk ricotta cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon or orange zest
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 2 tbsp unsalted butter (or oil) for sautéing

Instructions

  1. In a large bowl, combine the ricotta cheese, almond flour, sugar, eggs, and vanilla extract. Add zest and mix until smooth.
  2. Gradually incorporate the flour, mixing until a pliable, slightly sticky dough forms.
  3. Dust your work surface with flour. Roll small portions of dough into bite-sized pillows.
  4. In a skillet over medium heat, melt butter or heat oil. Cook the pillows for 3-4 minutes on each side until golden brown.
  5. Remove from heat and allow to rest. Sprinkle with powdered sugar or drizzle with honey before serving.
