- 1 cup whole-milk ricotta cheese
- 1/2 cup almond flour
- 2 large eggs
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp lemon or orange zest
- 1/4 cup all-purpose flour (or gluten-free flour)
- 2 tbsp unsalted butter (or oil) for sautéing
Instructions
- In a large bowl, combine the ricotta cheese, almond flour, sugar, eggs, and vanilla extract. Add zest and mix until smooth.
- Gradually incorporate the flour, mixing until a pliable, slightly sticky dough forms.
- Dust your work surface with flour. Roll small portions of dough into bite-sized pillows.
- In a skillet over medium heat, melt butter or heat oil. Cook the pillows for 3-4 minutes on each side until golden brown.
- Remove from heat and allow to rest. Sprinkle with powdered sugar or drizzle with honey before serving.
Notes
Avoid overmixing the dough to maintain a soft texture. Allow pillows to rest after cooking for better flavor and presentation.
