Ingredients

  • 2 lbs beef chuck roast, cut into large cubes
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 4 potatoes (Yukon Gold or red), chopped
  • 2 cups beef broth
  • 2 sprigs fresh thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Sauté garlic in a bit of butter until fragrant, then add to the slow cooker.
  3. Combine beef, sautéed garlic, chopped potatoes, herbs, and beef broth in the slow cooker.
  4. Cover with remaining butter, set on low, and cook for 6-8 hours.
  5. Once cooked, taste and adjust seasonings if needed. Serve hot with fresh herbs on top.

Notes

For added flavor, deglaze the pan with a splash of red wine after sautéing garlic and add to the slow cooker.
