Ingredients
- 2 lbs beef chuck roast, cut into large cubes
- 4 cloves garlic, minced
- 1/2 cup butter
- 4 potatoes (Yukon Gold or red), chopped
- 2 cups beef broth
- 2 sprigs fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- Season the beef cubes with salt and pepper.
- Sauté garlic in a bit of butter until fragrant, then add to the slow cooker.
- Combine beef, sautéed garlic, chopped potatoes, herbs, and beef broth in the slow cooker.
- Cover with remaining butter, set on low, and cook for 6-8 hours.
- Once cooked, taste and adjust seasonings if needed. Serve hot with fresh herbs on top.
Notes
For added flavor, deglaze the pan with a splash of red wine after sautéing garlic and add to the slow cooker.
