- 1 cup espresso powder
- 8 oz dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 1/2 cups granulated sugar
- 1 1/2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup milk (or dairy-free alternative)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Melt the dark chocolate in short intervals, stirring often.
- Whisk together flour, baking powder, baking soda, and espresso powder.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then stir in vanilla extract.
- Mix in melted chocolate until well combined.
- Gradually alternate adding dry ingredients and milk to the chocolate mixture.
- Divide batter into prepared pans and bake for 25-30 minutes.
- Cool in pans for 10 minutes, then transfer to a wire rack.
- Prepare dark chocolate ganache with heated cream and chopped chocolate for frosting.
- Top cooled cakes with ganache and garnish as desired.
