Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Red food coloring
  • Powdered sugar (for dusting)

Instructions

  1. In a saucepan, mix the sugar, corn syrup, and water. Cook over medium heat until the sugar is dissolved.
  2. Continue cooking until the mixture reaches a soft ball stage (around 234°F – 240°F).
  3. Remove from heat and carefully stir in the peppermint and vanilla extracts.
  4. Divide the mixture in half and color one half with red food coloring.
  5. Allow the mixture to cool until you can handle it, then knead it gently until soft and pliable.
  6. Roll pieces into small balls or into logs for candy cane shapes.
  7. Dust with powdered sugar to prevent sticking and let them set on parchment paper until firm.
  8. Store in an airtight container at room temperature.

Notes

Cooking the mixture too high can lead to hard candies instead of soft. Allow proper cooling time for best results.
