- Fresh Carrots (small to medium-sized)

Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and peel the carrots, then cut them into uniform pieces (about 2-3 inches long).
- Toss the carrots in a bowl with olive oil, salt, and pepper, then spread them out on the baking sheet in a single layer.
- Roast for about 25-30 minutes, turning halfway through for even caramelization.
- While the carrots roast, prepare the whipped ricotta by combining it with olive oil, salt, and herbs, then whip until smooth.
- Once the carrots are roasted, transfer them to a serving platter and top with whipped ricotta and drizzle with hot honey.
- Garnish with fresh herbs and serve warm.
Notes
Ensure carrots are cut to similar sizes for even cooking. Avoid overcrowding the baking sheet to prevent steaming.
