Ingredients
- 1 butternut squash, peeled and cubed
- 1 lb ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh sage or thyme, to taste
- Optional: bell peppers, carrots, or spinach
- Optional: paprika or cumin, for seasoning
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the butternut squash: cut it in half, scoop out the seeds, and peel. Chop into cubes.
- Toss the squash in olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25 to 30 minutes, until golden brown and tender.
- In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent.
- Add ground turkey, breaking it apart with a spoon, and cook until golden and cooked through. Season with herbs and spices.
- Combine roasted squash with sautéed turkey in the skillet and cook for an additional 5 minutes.
- Serve hot, drizzled with olive oil and topped with fresh herbs or parmesan, if desired.

Feel free to adjust cooking times and personalize spices. Adding a hint of crispiness to squash can enhance the dish.
