Ingredients

  • 1 butternut squash, peeled and cubed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the butternut squash: cut it in half, scoop out the seeds, and peel. Chop into cubes.
  3. Toss the squash in olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25 to 30 minutes, until golden brown and tender.
  4. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent.
