A light and airy angel food cake with a gooey chocolate lava center, perfect for holiday celebrations.

Ingredients

  • 10 Egg Whites
  • 1 cup Granulated Sugar
  • 1 cup Cake Flour
  • 1/4 tsp Salt
  • 1 tsp Cream of Tartar
  • 1 tsp Vanilla Extract
  • 6 oz Bittersweet Chocolate
  • 1/2 cup Heavy Cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an ungreased angel food pan.
  3. Whip egg whites in a clean bowl until frothy, then gradually add sugar and cream of tartar until soft peaks form.
  4. Sift together cake flour and salt in a separate bowl.
  5. Fold dry ingredients into the whipped egg whites gently to retain air.
  6. Add vanilla and fold until combined.
  7. Pour the mixture into the angel food pan and bake for 35-40 minutes until golden.
  8. For the chocolate filling, melt bittersweet chocolate and heavy cream in a saucepan over low heat until smooth.
  9. Once the cake cools, slice the top, create a cavity, pour in the chocolate filling, and replace the top.
  10. Dust with powdered sugar and serve with whipped cream.

Notes

Use room temperature egg whites for better volume and avoid greasing the pan to help the cake rise.
