Ingredients
- 10 Egg Whites
- 1 cup Granulated Sugar
- 1 cup Cake Flour
- 1/4 tsp Salt
- 1 tsp Cream of Tartar
- 1 tsp Vanilla Extract
- 6 oz Bittersweet Chocolate
- 1/2 cup Heavy Cream
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare an ungreased angel food pan.
- Whip egg whites in a clean bowl until frothy, then gradually add sugar and cream of tartar until soft peaks form.
- Sift together cake flour and salt in a separate bowl.
- Fold dry ingredients into the whipped egg whites gently to retain air.
- Add vanilla and fold until combined.
- Pour the mixture into the angel food pan and bake for 35-40 minutes until golden.
- For the chocolate filling, melt bittersweet chocolate and heavy cream in a saucepan over low heat until smooth.
- Once the cake cools, slice the top, create a cavity, pour in the chocolate filling, and replace the top.
- Dust with powdered sugar and serve with whipped cream.
Notes
Use room temperature egg whites for better volume and avoid greasing the pan to help the cake rise.
