- 2 pounds fresh carrots, peeled and cut
- 1/4 cup honey
- 2 tablespoons fresh thyme leaves
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the carrots in a large mixing bowl with olive oil, honey, fresh thyme, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 25-30 minutes, turning halfway through.
- Let them rest for a few minutes before serving.
Notes
To enhance caramelization, consider broiling the carrots for the last couple of minutes. Use larger baking sheets to prevent overcrowding.
