Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Frosting of choice (cream cheese or vanilla buttercream)

Instructions

  1. Cream together the softened butter and sugars until light and fluffy.
  2. Add the molasses, egg, and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and spices. Gradually mix this dry mixture into the wet ingredients until just combined.
  4. Chill the dough by forming it into a disk, wrapping it in plastic wrap, and refrigerating for at least 1–2 hours.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 8–10 minutes until the edges are set and the centers are slightly soft.
  8. Cool the cookies completely and frost the bottom of one cookie, placing another on top to create a sandwich.
