Ingredients
- 1 cup rolled oats
- 1 cup dark chocolate chips
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour, oats, baking powder, and baking soda. Slowly incorporate the dry mixture into the wet ingredients, being careful not to over-mix.
- Gently fold in the dark chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden brown. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
For a gluten-free version, replace regular oats with gluten-free oats. You can also try almond flour for a nuttier flavor.
