Ingredients
- 2 Fresh Cod Fillets
- 1 cup Panko Breadcrumbs
- 1/2 cup Finely Grated Parmesan Cheese
- 1 Egg
- 1 tsp Garlic Powder
- 1/4 cup Fresh Herbs (parsley or thyme), chopped
- Salt and Pepper to taste
- Olive Oil for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cod fillets under cold water and pat them dry with a paper towel.
- In a shallow bowl, beat one egg.
- In another bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, salt, pepper, and herbs. Mix well.
- Dip each cod fillet into the egg wash and let the excess drip off.
- Dredge the fillet in the panko mixture, pressing gently to adhere.
- Place the breaded fillets on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 15-20 minutes until the cod is cooked through and the breading is golden brown.
- Let rest for a minute, then serve hot with fresh herbs and lemon wedges.
Notes
For a gluten-free version, use gluten-free breadcrumbs. For a dairy-free option, substitute nutritional yeast for Parmesan.
