Ingredients

  • 2 Fresh Cod Fillets
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Finely Grated Parmesan Cheese
  • 1 Egg
  • 1 tsp Garlic Powder
  • 1/4 cup Fresh Herbs (parsley or thyme), chopped
  • Salt and Pepper to taste
  • Olive Oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cod fillets under cold water and pat them dry with a paper towel.
  3. In a shallow bowl, beat one egg.
  4. In another bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, salt, pepper, and herbs. Mix well.
  5. Dip each cod fillet into the egg wash and let the excess drip off.
  6. Dredge the fillet in the panko mixture, pressing gently to adhere.
  7. Place the breaded fillets on a baking sheet lined with parchment paper.
  8. Drizzle with olive oil.
