Ingredients
- 1 boneless turkey breast
- 2 cups fresh mushrooms (cremini or button)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh herbs (parsley, thyme, sage)
- 1/2 cup dried cherries or cranberries
- 1/4 cup chopped walnuts or pecans (optional)
- 4 strips bacon (optional)
- 1 cup seasoned bread crumbs
- Salt and pepper to taste
Instructions
- Sauté mushrooms in olive oil with garlic until golden. Add herbs and dried fruits, cooking for a few more minutes. Season with salt and pepper.
- Place turkey breast between parchment paper and pound to an even thickness of ½ inch.
- Spread mushroom mixture over the turkey, leaving space at the edges. Roll tightly and secure with kitchen twine.
- Heat oil in a skillet and sear the roulade on all sides until golden.
- Bake in a preheated oven at 375°F for 30-35 minutes until the internal temperature reaches 165°F.
- Let the roulade rest for 10 minutes before slicing.
