Ingredients

  • 1 boneless turkey breast
  • 2 cups fresh mushrooms (cremini or button)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (parsley, thyme, sage)
  • 1/2 cup dried cherries or cranberries
  • 1/4 cup chopped walnuts or pecans (optional)
  • 4 strips bacon (optional)
  • 1 cup seasoned bread crumbs
  • Salt and pepper to taste

Instructions

  1. Sauté mushrooms in olive oil with garlic until golden. Add herbs and dried fruits, cooking for a few more minutes. Season with salt and pepper.
  2. Place turkey breast between parchment paper and pound to an even thickness of ½ inch.
  3. Spread mushroom mixture over the turkey, leaving space at the edges. Roll tightly and secure with kitchen twine.
  4. Heat oil in a skillet and sear the roulade on all sides until golden.
  5. Bake in a preheated oven at 375°F for 30-35 minutes until the internal temperature reaches 165°F.
  6. Let the roulade rest for 10 minutes before slicing.
