Ingredients
- Udon noodles
- Kimchi
- Unsalted butter
- Garlic
- Medium to large eggs
- Green onions (scallions)
- Sesame seeds
- Soy sauce
Instructions
- Cook the udon noodles according to package instructions (2-4 minutes for fresh noodles).
- In a separate pot, boil water and carefully add eggs, cooking for 6-7 minutes for soft-boiled.
- Transfer eggs to an ice bath to stop the cooking process.
- Melt butter in a large skillet over medium heat, adding minced garlic and sauté until fragrant (about 30 seconds).
- Add chopped kimchi to the skillet and cook for another minute.
- Drain the cooked udon noodles and toss them with the butter and kimchi mixture.
- Peel the soft-boiled eggs and cut in half, placing atop the udon.
- Garnish with sliced scallions and sesame seeds, then serve warm.
Notes
Feel free to substitute udon with ramen or other noodles and adjust kimchi according to your spice preference.
