Ingredients

  • Udon noodles
  • Kimchi
  • Unsalted butter
  • Garlic
  • Medium to large eggs
  • Green onions (scallions)
  • Sesame seeds
  • Soy sauce

Instructions

  1. Cook the udon noodles according to package instructions (2-4 minutes for fresh noodles).
  2. In a separate pot, boil water and carefully add eggs, cooking for 6-7 minutes for soft-boiled.
  3. Transfer eggs to an ice bath to stop the cooking process.
  4. Melt butter in a large skillet over medium heat, adding minced garlic and sauté until fragrant (about 30 seconds).
  5. Add chopped kimchi to the skillet and cook for another minute.
  6. Drain the cooked udon noodles and toss them with the butter and kimchi mixture.
  7. Peel the soft-boiled eggs and cut in half, placing atop the udon.
  8. Garnish with sliced scallions and sesame seeds, then serve warm.
