Ingredients

  • 1 cup fresh strawberries, diced
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • Optional: nuts or shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Wash and dice the strawberries, then pat dry.
  3. In a bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until combined.
  5. In another bowl, whisk together flour, baking powder, and salt, then gradually add to the wet mixture.
  6. Fold in the strawberries and white chocolate chips.
  7. Drop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Ensure butter is softened but not melted.
