A delightful and tender Mongolian beef dish cooked effortlessly in a slow cooker with a rich sauce that brings the family together.

Ingredients

  • 1 lb flank steak or sirloin, sliced into thin strips
  • 1/2 cup soy sauce (low-sodium recommended)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 tbsp sesame oil
  • 2 tbsp cornstarch
  • Optional: bell peppers, broccoli, or snap peas
  • 2 green onions, chopped (for garnish)

Instructions

  1. Slice beef into thin strips against the grain and season lightly with salt and pepper.
  2. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and sesame oil until smooth to create the sauce.
  3. Place the beef in the slow cooker and cover with the sauce.
  4. Cook on low for 4-5 hours or on high for 2-3 hours.
  5. About 30 minutes before serving, mix cornstarch with cold water and stir into the slow cooker to thicken the sauce.
  6. Add vegetables if using, in the last hour of cooking.
  7. Before serving, top with chopped green onions and enjoy!

Notes

For a lighter twist, substitute beef with chicken or tofu. Make sure not to overfill the slow cooker for even cooking.
