Ingredients
- 4 boneless chicken breasts or thighs
- 3-4 tablespoons extra virgin olive oil
- Juice from 1 lemon
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 small cucumber, grated
- 1 clove garlic, minced (for tzatziki)
- Fresh dill (or mint), chopped
- Juice of half a lemon (for tzatziki)
- 1 cucumber, diced
- Cherry tomatoes (optional), halved
Instructions
- Marinate the chicken with olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
- Grill or sauté the marinated chicken for 6-7 minutes on each side until fully cooked and juices run clear. Let rest for 5 minutes, then slice.
- Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper until smooth.
- In a large bowl, combine sliced chicken, diced cucumbers, and optional cherry tomatoes. Drizzle with tzatziki sauce and mix gently.
- Serve on a platter or in bowls, garnishing with extra herbs or smoked paprika if desired.
Notes
To make a complete meal, serve on mixed greens, quinoa, or with pita bread.
