Ingredients

  • 4 boneless chicken breasts or thighs
  • 3-4 tablespoons extra virgin olive oil
  • Juice from 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 small cucumber, grated
  • 1 clove garlic, minced (for tzatziki)
  • Fresh dill (or mint), chopped
  • Juice of half a lemon (for tzatziki)
  • 1 cucumber, diced
  • Cherry tomatoes (optional), halved

Instructions

  1. Marinate the chicken with olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or sauté the marinated chicken for 6-7 minutes on each side until fully cooked and juices run clear. Let rest for 5 minutes, then slice.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper until smooth.
  4. In a large bowl, combine sliced chicken, diced cucumbers, and optional cherry tomatoes. Drizzle with tzatziki sauce and mix gently.
  5. Serve on a platter or in bowls, garnishing with extra herbs or smoked paprika if desired.
