Ingredients

  • 4 cod fillets, boneless and skinless
  • 1 cup panko breadcrumbs

  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil.
  3. In a shallow dish, combine panko, parmesan, garlic, herbs, salt, and pepper.
  4. Drizzle olive oil over both sides of the cod fillets and dredge in the panko mixture, pressing to adhere.
  5. Place the coated fillets on the baking sheet.
  6. Bake for 12-15 minutes, until the fish flakes easily and the crust is golden brown.
  7. Serve immediately with lemon wedges.
