Ingredients
- 4 cod fillets, boneless and skinless
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or foil.
- In a shallow dish, combine panko, parmesan, garlic, herbs, salt, and pepper.
- Drizzle olive oil over both sides of the cod fillets and dredge in the panko mixture, pressing to adhere.
- Place the coated fillets on the baking sheet.
- Bake for 12-15 minutes, until the fish flakes easily and the crust is golden brown.
- Serve immediately with lemon wedges.
Notes
To achieve extra crunch, consider broiling for the last minute. Ensure not to overcrowd the baking sheet for even baking.
