- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1/2 cup brewed coffee
- 2 eggs
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 4-5 minutes).
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the brewed coffee, stirring until combined.
- Scoop rounded portions of dough onto ungreased baking sheets.
- Bake for 10-12 minutes until edges are golden and centers are soft.
- Let cool on baking sheets for 5 minutes before transferring to wire racks.
