Ingredients
- 4 skinless and boneless chicken thighs
- 1/2 cup brown sugar
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, chopped
- 1 cup pineapple chunks
- 1 tablespoon oil for searing
- Optional: red pepper flakes for spice
Instructions
- Marinate the Chicken: Combine brown sugar, pineapple juice, soy sauce, garlic, and ginger in a bowl. Whisk until smooth. Add chicken, coat well, cover, and marinate in the refrigerator for at least 30 minutes.
- Sear the Chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken and sear for 4-5 minutes on each side until cooked through.
- Make the Sauce: Remove chicken, add reserved marinade to skillet, bring to boil, and simmer for 5 minutes to thicken.
- Combine and Serve: Return chicken to skillet, coat in the sauce, add pineapple chunks and green onions, and warm through.
- Garnish and Enjoy: Serve over rice or with roasted vegetables, drizzling extra sauce on top and garnishing with green onions.
Notes
Feel free to add bell peppers for extra crunch or substitute chicken with shrimp or tofu for different dietary preferences. Ensure chicken is not overcooked for the best texture.
