Ingredients

  • 4 Fresh Salmon Fillets
  • 1/4 cup Unsalted Butter (softened)
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Fresh Orange Juice
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Orange Zest
  • Salt to taste
  • Fresh Dill or Parsley, chopped
  • Thinly sliced Zucchini or Bell Peppers
  • Black Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut four large rectangles of parchment paper, about 12 x 16 inches.
  3. Fold each rectangle in half and open it up again to create a crease.
  4. Lay an even amount of chosen vegetables on one side of the parchment.
  5. Place a salmon fillet atop the veggies and spoon citrus butter over the fish.
  6. Sprinkle with herbs, salt, and pepper.
  7. Fold the other half of the parchment over and seal by making small, tight folds.
  8. Place on a baking sheet and bake for 15-20 minutes.
  9. Carefully open the packets to serve immediately, being cautious of steam.

Notes

Use wild-caught salmon for the best flavor. Fresh herbs enhance the flavor, while seasonal veggies can be added for color and nutrients.
