Ingredients
- 4 Fresh Salmon Fillets
- 1/4 cup Unsalted Butter (softened)
- 2 tablespoons Fresh Lemon Juice
- 2 tablespoons Fresh Orange Juice
- 1 teaspoon Lemon Zest
- 1 teaspoon Orange Zest
- Salt to taste
- Fresh Dill or Parsley, chopped
- Thinly sliced Zucchini or Bell Peppers
- Black Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut four large rectangles of parchment paper, about 12 x 16 inches.
- Fold each rectangle in half and open it up again to create a crease.
- Lay an even amount of chosen vegetables on one side of the parchment.
- Place a salmon fillet atop the veggies and spoon citrus butter over the fish.
- Sprinkle with herbs, salt, and pepper.
- Fold the other half of the parchment over and seal by making small, tight folds.
- Place on a baking sheet and bake for 15-20 minutes.
- Carefully open the packets to serve immediately, being cautious of steam.
Notes
Use wild-caught salmon for the best flavor. Fresh herbs enhance the flavor, while seasonal veggies can be added for color and nutrients.
