Ingredients

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 2 eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk (dairy or plant-based)
  • 1/4 cup granulated sugar or honey (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together 2 cups of almond flour, 2 teaspoons of baking powder, and a pinch of salt.
  3. In another bowl, beat together 2 eggs, 1/4 cup of melted unsalted butter, and 1/4 cup of milk until smooth.
  4. Pour the wet ingredients into the dry mixture. Stir gently until combined—avoid over-mixing.
  5. If you’re adding extras, fold them in now.
  6. Scoop the dough onto your prepared baking sheet, forming rough mounds or using a round cutter.
  7. Bake for about 15-20 minutes, or until the tops are lightly golden.
  8. Let them cool for a few minutes on the sheet before transferring them to a wire rack.

Notes

For a nice finish, brush the tops with melted butter and sprinkle a little sugar before baking.
