Ingredients
- 2 cups almond flour
- 2 teaspoons baking powder
- 1 pinch salt
- 2 eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup milk (dairy or plant-based)
- 1/4 cup granulated sugar or honey (to taste)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together 2 cups of almond flour, 2 teaspoons of baking powder, and a pinch of salt.
- In another bowl, beat together 2 eggs, 1/4 cup of melted unsalted butter, and 1/4 cup of milk until smooth.
- Pour the wet ingredients into the dry mixture. Stir gently until combined—avoid over-mixing.
- If you’re adding extras, fold them in now.
- Scoop the dough onto your prepared baking sheet, forming rough mounds or using a round cutter.
- Bake for about 15-20 minutes, or until the tops are lightly golden.
- Let them cool for a few minutes on the sheet before transferring them to a wire rack.
Notes
For a nice finish, brush the tops with melted butter and sprinkle a little sugar before baking.
