Instructions
- Prepare the scallops by rinsing gently in cold water and patting dry. Slice thinly into rounds.

- On a chilled plate, fan out the scallop slices and distribute finger lime pearls. Sprinkle with chopped herbs and drizzle with olive oil and a pinch of sea salt.
